Ingredients

• 1/2 cup honey
• 1 tsp cinnamon
• 1 pineapple

Instructions

1. Grill pineapple slices over medium heat for 5 to 10 minutes.

Salmon

For the best taste possible marinate with equal parts brown sugar, butter, olive oil, honey, and soy sauce. This works best directly on the grill cooked for 10-20 minutes depending on the filet size. Make sure to place the salmon on the grill skin side up and do not flip it.

Catfish

For seasoning, dip the fish in olive oil and  dry rub with lemon pepper. Catfish works best on aluminum foil, cooking 4 minutes on each side. While aluminum foil should be used, don’t use foil packets so your fish doesn’t turn out to be too greasy.

Mahi Mahi

Rub the fish with Jamaican Jerk seasoning and serve with mango salsa for an more tropical inspired meal. To cook, place directly on the grill for 4 minutes on each side.

Red Snapper

Season this by rubbing it with olive oil, salt, garlic and rosemary before placing it in a grill basket. In terms of grill time, it takes 7 minutes on each side. If really you want to impress your guests, use a whole red snapper.

Swordfish

After rubbing it with salt and pepper, marinate swordfish with olive oil, lemon juice, garlic, and fresh rosemary. This works best directly on the grill for 5-6 minutes on each side. Make sure to be patient before flipping because the texture of swordfish can great awesome grill marks.

Tilapia

Season this by salt and peppering the filets and then brush it with a lemon vinaigrette. You can make it with olive oil, garlic, peppers, and lemon peel. Cook the tilapia in an aluminum foil packet for 5-6 minutes on each side. Make sure to flip the packet carefully to keep the fish from crumbling.

Tuna

Season this fish with olive oil and then rub it with salt and pepper just before grilling. It works best directly on the grill with just 3 minutes per side for medium rare. If you’re interested in smoking, consider using hickory chips for a flavor boost.

Halibut

Marinate the fish with butter, lemon juice, onion powder, dill, salt and pepper. This works best in an aluminum foil packet cooking for 5-6 minutes on each side. For help, halibut is cooked through when the center of the filet is opaque.
